Tip: when frying chicken nuggets, it is best that you have an air fryer where you can automatically set the temperature to a specific value and be able to manually adjust it with small increments, like the GoWise 3.7-quart programmable air fryer. - Wash and chop the chicken breast;
- Wash and chop the chicken breast;
- Wash and finely chop the parsley, then set aside one teaspoon of chopped parsley;
- Break only one egg into a bowl and whisk it well.
- Prepare a batter from your dry ingredients: mix the breadcrumbs with paprika, pepper, and salt and set aside;
- Separately, mix the chopped chicken with the teaspoon of parsley, the other egg, and the ketchup, mixing well until you obtain an even composition;
- Start modeling little nuggets from your chicken mixture, dip them into the whisked egg, and roll them through the batter of breadcrumbs and spices;
- Spray the nuggets with the olive oil and cook them for about 10 minutes at 390◦F;
- Serve them hot, with the mayo dip.
