  1. Wash and chop the chicken breast;
  2. Wash and chop the chicken breast;
  3. Wash and finely chop the parsley, then set aside one teaspoon of chopped parsley;
  4. Break only one egg into a bowl and whisk it well.
  1. Prepare a batter from your dry ingredients: mix the breadcrumbs with paprika, pepper, and salt and set aside;
  2. Separately, mix the chopped chicken with the teaspoon of parsley, the other egg, and the ketchup, mixing well until you obtain an even composition;
  3. Start modeling little nuggets from your chicken mixture, dip them into the whisked egg, and roll them through the batter of breadcrumbs and spices;
  4. Spray the nuggets with the olive oil and cook them for about 10 minutes at 390◦F;
  5. Serve them hot, with the mayo dip.
