Air Fried Chicken Tortilla With Rainbow Filling

Cooking instruments: the air fryer, a saucepan, a cutting board and a knife, a spatula, and a plate.

Tip: for this recipe, almost any air fryer will do the job of heating up the tortilla wraps, but if you can use one that lets you preheat the frying basket first, like the NutriChef air fryer, you’ll have more control on the cooking time!

Enjoy this mix of textures, colors, and nutrients of the crunchy chicken breast, squashy black beans, fiber-packed avocado, and popping corn, all soothed by the mouthful flavor of fresh coriander. Meat, veggies and green spices, not in a salad bowl, but in a hot tortilla wrapper – the ideal snack or appetizer!

Baked tortilla wrappers
  1. Wash and cut the chicken breast, into small pieces;
  2. Wash and chop the coriander leaves;
  3. Peel, wash and mince the 2 garlic cloves.
Cook the chicken breast in a frying pan:
  1. Heat up the pan and add a tablespoon of olive oil;
  2. Add the minced garlic cloves and stir, frying it for a minute or so, until it releases its fragrance into the oil;
  3. Add the chicken, with salt and pepper to taste;
  4. Fry the chicken until it turns opaque instead of that vivid pink of the raw meat;
  5. Transfer to a bowl and set it aside;
Prepare the dressing:
  1. Add the yogurt and the chopped coriander into the blender;
  2. Mix until you obtain a fine puree;
  3. Let it sit for a while;
Heat up the tortilla wrappers:
  1. Turn on the air fryer;
  2. Use the preheat function to bring it to 360 F;
  3. Put each wrapper into the frying basket and let it heat up for up to 7 minutes;
Wrap up the tortillas:
  1. Take the hot tortilla out of the air fryer;
  2. Spread some of that green sauce on it;
  3. Throw in a few of the fried chicken pieces;
  4. Add black beans and some corn kernels;
  5. Top it off with a quarter of avocado, sliced;
  6. Wrap it and serve it right away.

Try it with a twist:
If you’d like to give your wrappers an even fresher taste and more healthy nutrients, toss in some chopped cherry tomatoes and shallots! If, on the contrary, you want to spoil yourself a little bit, you can swap the avocado for some whipped cream!
