Air Fried Chicken Tortilla With Rainbow Filling
Enjoy this mix of textures, colors, and nutrients of the crunchy chicken breast, squashy black beans, fiber-packed avocado, and popping corn, all soothed by the mouthful flavor of fresh coriander. Meat, veggies and green spices, not in a salad bowl, but in a hot tortilla wrapper – the ideal snack or appetizer!

  1. Wash and cut the chicken breast, into small pieces;
  2. Wash and chop the coriander leaves;
  3. Peel, wash and mince the 2 garlic cloves.
Cook the chicken breast in a frying pan:
  1. Heat up the pan and add a tablespoon of olive oil;
  2. Add the minced garlic cloves and stir, frying it for a minute or so, until it releases its fragrance into the oil;
  3. Add the chicken, with salt and pepper to taste;
  4. Fry the chicken until it turns opaque instead of that vivid pink of the raw meat;
  5. Transfer to a bowl and set it aside;
Prepare the dressing:
  1. Add the yogurt and the chopped coriander into the blender;
  2. Mix until you obtain a fine puree;
  3. Let it sit for a while;
Heat up the tortilla wrappers:
  1. Turn on the air fryer;
  2. Use the preheat function to bring it to 360 F;
  3. Put each wrapper into the frying basket and let it heat up for up to 7 minutes;
Wrap up the tortillas:
  1. Take the hot tortilla out of the air fryer;
  2. Spread some of that green sauce on it;
  3. Throw in a few of the fried chicken pieces;
  4. Add black beans and some corn kernels;
  5. Top it off with a quarter of avocado, sliced;
  6. Wrap it and serve it right away.
