Stuffed Eggplant With A Spicy Kick
Yet another way to cook veggies at your air fryer, this time with a finger-licking stuffed eggplant recipe. Perfect for a light summer dinner or a fancy replacement of the traditional eggplant salad, this one will work perfectly even for a picnic! It has fibers, and proteins, and vitamins that you just can’t say no to. Plus, with a bit of freshly ground piquancy, you can’t go wrong with it!

  1. Wash, cut the eggplant in half, and scoop out its inner portion – you might as well discard it, because you have to make room for the filling.
  2. Preheat the air fryer at 360 degrees Fahrenheit (or 180 degrees Celsius).
  3. Drizzle a little bit of olive oil and sprinkle pepper onto the eggplants, then have them cook for 10 minutes.
  1. While the eggplants are precooked in the air fryer, you can prepare the filling.
  2. Wash and finely slice the garlic cloves.
  3. Wash and chop the parsley.
  4. Break the egg in a bowl and wish it well.
  5. Add the breadcrumbs, the parsley, the garlic, and some salt to taste.
  6. Mix it well and use the filling to stuff the eggplants when it’s halfway cooked.
  7. Once the first 10 minutes have expired and you’ve filled the eggplants with the moist ingredients, let it sit in the air fryer for another 5 – 8 minutes at the same temperatures.
  8. You can serve it with some feta cheese sprinkled on top, when it’s ready.
