A classic comfort food, the old time favorite mac and cheese, in a nearly guilt-free version. Forget that it’s cooked in the air fryer, it’s the broccoli and cauliflower twist that it brings to the table. A tasty way to tuck in more veggies, in case you needed!

Instructions
Preparation
  1. Sink the cauliflower and the broccoli heads into cold water with salt and let it sit like that for a while – this way, the tinny bugs or insects that might have nestled between the florets will come out and you’ll get perfectly clean veggies;
  2. Prepare the cooking pot with water and a pinch of salt;
  3. Place it on the stove, at high heat, and bring it to a boil;
  4. In the meantime, start grating the cheddar and the parmesan cheese, if you haven’t bought it already grated;
  5. Wash and cut the cauliflower and broccoli florets into smaller pieces – you can cut it very small if you are not a big fan of these veggies, it is always best to be smaller than larger, to cook evenly and fast.
Instructions
  1. When the water boils, add the macaroni and the chopped vegetables;
  2. Let it simmer, by reducing the heat to medium, for 7-10 minutes – try not to stir too often so you won’t smash them as they start to soften;
  3. Drain out the water and place the macaroni and the veggies into a large bowl;
  4. Season it all with salt and pepper;
  5. Transfer the pasta into an ovenproof dish – it is best if you move fast, so that the cheese will start melting immediately, from the heat of the macaroni and veggies;
  6. Sprinkle the grated cheese assortments on top of it;
  7. Place the dish inside the air fryer cooking chamber;
  8. Set the temperature to 360 degrees F
  9. Let it cook for approximately 15 minutes or until you notice that the pasta starts bubbling.
